I have several 3TB+ drives formatted using GPT in an external bay. They show up as non-removable in Windows but when the system is off I can remove/replace them without problems. Perhaps the info you read refers to hot-swapping? That I wouldn't try.

Hi, We have 4 Western Digital 3 TB drives and 2 Hitatchi 4 TB drives. We use them in drive bays connected via USB3

My mobo has 8 sata ports. I run six 4TB drives and one optical drive, and my OS drive (ssd). All GPT format with no issues. They're in hot swappable drive bays, but GPT drives over 2TB do not show up as hot swappable. As noted above you can swap with the power off but it is not advised to do it with the power on.
