In regedit go to this path: HKEY_CURRENT_USER\Software\VEGAS Creative Software\VEGAS Pro\20.0\Metrics\Application And delete the records that indicate the list of recent projects. (You can delete it if you just want the project that's bothering you.)
Thanks both, @m3lquixd that might come in handy if I just want to get rid of one or two, but I've tagged @john_dennis as the solution because it was easier just to clear them all,
Although @john_dennis is the safest and most elegant solution, I must say @m3lquixd has fixed an issue for me:
I was experimenting with nesting and had some crashes and 9 bad projects as a result (max list 9), I deleted the projects themselves from my disk, but then I could not start Vegas anymore, it opened, then closed by itself up on start (it was still showing the projects). Obviously I could not use @john_dennis method as it needs Vegas running!
Solution: After deleting the registry entries as @m3lquixd indicated, I was able to startup Vegas again!

@bitman I found some in that regedit folder, don't have a screen capture of that but I recognise them, I haven't had problems with nesting recently but deleted them anyway as it seems they're now superfluous, but they're still showing in Vegas after it's launched 🤔 (lots of buts there 🤭)
